::strawberry jam::

As part of my personal craziness, I want to learn a lot about canning this year.  We got the chance to go and do some berry picking a few days ago.  I didn't realize that these fresh berries do not keep very long.  We still had tons left, and since I didn't want them to go to waste I decided we would make jam.  I have seen several people blogging about it and it just didn't look that complex.  (like some canning stuff does)

I found this method online a few days ago, but I can not find were!  You just push the straw in the bottom of the strawberry and it hulls it.  They kids thought it was great fun.  We had all four cups done in about 10 minutes.  They can really work hard when they want to.

I cut up a 2L and have been using it in the kitchen for scraps that can be fed to the goats.  We had many strawberry's that were already too rotten to use for jam.  At least the goats got to use them.

The recipe was straight off the Pectin envelope.  But I only used 1 cup of sugar instead of 1.5.

I smashed it all up in my food processor cause I don't like fruit chunks in my jam.  Then I scooped it out in to the little jars.

Emma was in charge of labeling our jars.  I will be looking on Etsy for some cooler labels.

The final product!  It is so good that I could eat it with a spoon.  It is good for three weeks in the fridge and one year in the freezer!  Who wants some?
